Oatcakes - (savoury pancake), traditional regional hotcake unique to Stoke-On-Trent Staffordshire.
Ingredients - Note: All need to be warm !
- Oatmeal 2 cups
- or Rolled/Old Fashioned Oats, use blender 'till they are more like flour.
- Flour 1 cup
- Salt 1/2 tsp
- Milk 2 Cups & Warm Water to Make a Pint
- You can try any combination of milk (fresh, powdered, canned) and water
- Yeast 1 tsp
- Sugar 1 tsp
- Warm water 1 cup
- Yeast + Sugar + Warm Water - Mix separately and let stand 'till yeast is working.
- Mix all other ingredients, use a mix master, add liquid slowly to eliminate lumps.
- Add yeast mixture.
- The mixture should be quite thin/runny (add water).
- Let stand for at least 1 hour or over night.
- Cook on a lightly greased baxton (frying Pan) or griddle so that the oatcakes resemble crepes
- The griddle needs to be fairly hot so that it causes the mixture to 'bubble' before flipping.
Method
- with bacon and eggs
- grilled with cheese
- wrap a banana
- just plain, with a bit of salt
