Oatcakes (savoury pancake), a traditional regional hotcake from
Staffordshire.
These oatcakes are unique to Stoke-On-Trent.
Oatcakes
Method
- Mix all ingredients except yeast, use a mix master, add yeast mix last
- Let stand for at least 1 hour or over night - Ensure that yeast has worked !
- The mixture should be quite thin (add water).
- Cook on a lightly greased baxton (frying Pan) or griddle so that the oatcakes
resemble crepes
- The griddle needs to be fairly hot so that it causes the mixture to 'bubble'
before flipping.
Serve and enjoy
- with bacon and eggs
- grilled with cheese
- wrap a banana
- just plain, with a bit of salt
This traditional, original fast food, is now sold as
a "Health Food" !
